I don't understand why he was licking it, as he wasn't trying to email anything.
I think Letterman was paid to show off this device at the last minute, and that's why he didn't know how to handle it. Was he supposed to read the top ten from the iPad and then improvised with the cards? I think so.
I think the way he handled the device made the iPad look bad, and if I were Steve Jobs, I'd be asking for my money back!
